Raspberry sorbet

Raspberry sorbet is a classic fruit sorbet that balances natural sweetness with bright acidity. It’s one of the easiest ways to learn how to make sorbet at home, requiring just a few ingredients and a simple freezing technique. The result is a smooth, refreshing dessert with intense berry flavour.

Cooking time: 7 hr

Ingredients:

Portions: 8
  • 500 g raspberries (fresh or frozen)
  • 150 ml water
  • 150 g sugar
  • 1 tbsp lemon juice
  • Pinch of salt

How to:

  1. Make the sugar syrup: Combine water and sugar in a saucepan. Heat gently until the sugar has fully dissolved. Let cool completely.
  2. Prepare the raspberry purée: Blend the raspberries with lemon juice and a pinch of salt until smooth.
  3. Pass the purée through a fine sieve to remove seeds for a smoother sorbet.
  4. Combine the cooled sugar syrup with the raspberry purée. Taste and adjust sweetness if needed.
  5. Refrigerate the mixture for at least 2–4 hours, preferably overnight.
  6. Pour into an ice cream machine and churn until thick and smooth. If you don’t have a machine, freeze in a shallow container and stir every 30–45 minutes until set.
  7. Transfer to a container and freeze for 1–2 hours before serving for the perfect texture.
