Cucumber granita

Cucumber granita is a light, refreshing frozen dessert that works just as well as a palate cleanser as it does a simple summer treat. With its crisp flavour and icy texture, it’s an easy way to bring something unexpected and elegant to the table.

Preparation time: 15 min
Cooking time: 24 hr

Ingredients:

Portions: 8
  • 3 cucumbers
  • 175 ml water
  • 100 ml honey
  • 1.5 limes
  • 1 tsp salt
  • green apple, for garnish
  • mini cucumber, for garnish

How to:

  1. Peel 2 of the 3 cucumbers (leaving the peel on gives a lovely green colour) and cut into large chunks.
  2. Add the cucumber, water, honey, the juice of 1.5 limes and salt to a blender. Blend on high speed until the mixture is smooth.
  3. Strain the cucumber juice and pour into plastic ice cube trays. Freeze for 24 hours.
  4. Place the cucumber cubes in the ice-crushing attachment of the KitchenAid and crush into a glass at speed 10.
  5. Garnish your granita with slices of green apple and cucumber.
